Eggless Apricot Raisin Balls

Your Vegetarian Kitchen’s Eggless Apricot Raisin Balls are a scrumptious no-bake treat that is suitable for lunch boxes, picnics and hiking/biking excursions.


  • 1 Cup each Raisins, Sultanas and Apricots
  • 3 Tbsp Almond Butter
  • 3 Tbsp Honey

Put all the ingredients into your Kitchen Aid Food Processor and pulse. Using a ¾ ounce dasher, scoop small balls of the mixture and drop them into a bowl of dried coconut powder. Coat the balls and store in an air tight canister separated by sheets of waxed paper.

For variations on the theme:

1)   Prepare without Honey and Nut Butter.
2)   Use dried Michigan Berries and Cherries in place of the Apricots
3)   For an Antioxidant Boost place 1 Cup Acai Powder along with the dried coconut powder in a bowl and roll the fruit balls in it. YUM!!!
