Eggless Hazelnut Cookies

These eggless hazelnut cookies melt-in-your-mouth! Love Hazelnuts? Well, here is a new classic to add to your repertoire; made in your vegetarian kitchen. Preheat the oven to 325°


  • 2 Cups Unbleached Flour
  • 6 Tbsp Granulated Sugar
  • 2 Cups Butter
  • ¼ tsp Sea Salt
  • 1 Cup Hazelnut Meal
  • 1 tsp Vanilla
  • Confectioners’ Sugar

Cream together the butter and sugar. Add the rest of the ingredients mixing them together. Chill for half an hour and roll out onto a lightly floured board. Cut into crescents. Bake at 325° on a parchment covered cookie sheet for 8 to 10 minutes. Remove to a wire rack to cool. Dust liberally with confectioners’ sugar sprinkled through a wire sieve. When cool store in an airtight container separated by waxed paper.
