Eggless Vegetarian Quiche Lion

An Eggless Quiche? Isn’t that an oxymoron? Not when you prepare our Eggless Vegetarian Quiche Lion. This is a superb Dairy Quiche that has stood the test of time and literally, hundreds of well satisfied customers!

Preheat oven 350°. Prepare 2 traditional pie crusts.


  • 2 Cups Sliced Baby Bella Mushrooms
  • 2 Cups Sliced Field Mushrooms
  • 2 Tbs. Minced Garlic
  • 2 Tbs. Ghee or Canola Oil
  • lquart can Ricotta Cheese
  • 1 Cup Half and Half
  • ¼ Cup Ener-G Egg Replacer or OrgraN No-Egg
  • 3/4 Cup Grated Monterey Jack Cheese
  • 3/4 Cup Grated Jarlsberg
  • ¼ Cup Mild Cheddar
  • 1 tsp. Turmeric
  • 1/8 tsp. Nutmeg
  • Pinch of Cayenne

Sauté Mushrooms and Onions separately and distribute them in the bottom of the pre-baked pie shells. Mix the other ingredients together and pour into prepared pie crusts. Bake at 350 for 35 - 40 minutes. The filling should puff up a bit and turn slightly golden brown. Allow to cool on a wire rack. It is sometimes better, though not necessary, to bake these quiche a day ahead of time to allow them to set-up properly for most cleanly cut slices and development of flavors. Enjoy! Many hundreds of other people have!

For a variation on the theme add blanched fresh asparagus tips and a wee tiny bit of fresh Tarragon. Do please remember that a tiny bit of Tarragon goes a very long way.
