Spelt Chocolate Chip Shortbread Cookies

Cream together:

1 Cup Sugar

1 Pound Butter

Add 1 Cup Brown Rice Flour

Cream until soft and no longer grainy

Add 1 tsp Baking Powder, a pinch of Sea Salt, 2 Cups Spelt Flour and 1 Cup Sunspire Semi Sweet Dark Chocolate Chips

Drop by spoons full onto parchment on a cookie sheet. Leave room between spoonfuls. Flatten with a floured glass and prick with fork clear through the cookie to the pan. Chill in refrigerator for 2 hours. Bake at low temperature 300 degrees for 40 minutes until golden brown at the edges. Do not over bake as it will destroy the flavor.

Let stand on the parchment paper until well cooled.
