1 Apple Soy-sage Tofu Bake with Nature’s Path Granola An amazingly delicious power packed vegan breakfast casserole
Cortland or Macintosh Apples are best to use for this recipe as they are sweet, tart, crisp and tender!
Preheat oven to 350º
6 Apples peeled and cored, sliced thinly into sea salted water to preserve their color. 1 Package
Lightlife Breakfast Links 2 Package Silken Tofu 1 Tbs. Tahini ½ Cup Maple Syrup 2 Tbs. dry Ener-G Egg Replacer ¼ Tsp Sea Salt 1 Cup
Nature's Path
Açai Apple Granola ¼ Cup Additional Maple Syrup to drizzle over the top.
Soy Sausage Grill Soy Sausage until golden and crisp. Blot on paper towel. Reserve. Drain Apples. Dust with Ground Cinnamon and Ginger. Reserving 1 Cup Sliced Apple for the top; fill Casserole dish with Granola and sliced Apples. Process Silken Tofu with Tahini, EggReplacer, Maple Syrup and Sea Salt. Pour into the casserole dish. Top with Breakfast Links and Sliced Apples. Drizzle Maple Syrup over the top Bake at 350º for half an hour. Serve hot.

2 Tofu Omelet Atento
2 Cups Firm Tofu Crumbled ½ Cup Soy Milk ½ tsp. Turmeric ½ tsp. Ener-G Egg Replacer 1 tsp. Sea Salt 5 grains Black Salt
Process Tofu and the rest of the ingredients. Grease Omelet pan with 1 Tbs. Canola Oil ¼ Cup

Pour into a heated greased omelet pan. Allow to set up without stirring until the edges appear to be firm but are not browned. Remove from the burner and place under a heated broiler for 2 -3 minutes until the top is set and lightly browned. Remove and fill half of the omelet with Food for Thought’s Organic Cherry Salsa Atento, a simply fantastic balance of fresh Michigan tomatoes, Montmorency cherries, lots of love and pure intention. You can also use it as an traditional dip or as a grilling accompaniment.

5 Porridge Mother called breakfast cereal ‘porridge’ and the little bears at the table gobbled it up.
What’s porridge? Freshly ground grains of several varieties cooked in the crock pot overnight until it is soft, smooth and creamy; topped with a wide variety of nuts and seeds, fruit and syrup, organic preserves, molasses or honey and a dollop of yogurt – YUM! Use 3 – 4 Cups of RO Water for every cup of grain.

8 Waffles
1½ Cups White Whole Wheat Flour 2 tsp. Aluminum-free Baking Powder ½ tsp. Baking Soda ½ tsp Sea Salt 2 Tbs. dry Ener-G Egg Replacer 2 Tbs. Sucanat or Turbinado Sugar 1½ Cups Buttermilk or Kefir ¾ Cup Corn oil
Maple Syrup and Fresh Berries for the top Sift dry ingredients together. Add Buttermilk and Corn Oil. Whisk together. If the batter seems thick add more Buttermilk or Kefir. Pour onto hot sprayed waffle iron. Bake until golden. Serve hot.

Whisk tofu and almond milk together with seasonings. Soak bread and fry in Canola Oil. Serve with Food for Thought’s Organic Apricot Chardonnay, or Organic Cherry Raspberry Preserves or pure Maple Syrup.

Organic Cherry Raspberry Preserves 1 Pkg. Silken Soft Tofu 1 1/2 Qt Almond Milk 1 T Almond extract 1 T Vanilla extract 1 T Cinnamon Butter or Canola Oil Maple Syrup or Powdered Sugar
Cut bread into 1-inch slices and cut a pocket into each side. Combine almonds, cream cheese and preserves and stuff into bread pockets. Beat together tofu, almond milk and flavorings. Soak bread in mixture and sauté in butter until browned on both sides. Serve with Maple Syrup or Powdered Sugar -- 1-4 slices per person.
